The breakfast move
The Donut Hole in Santa Rosa Beach is the default. Old-school diner, every booth occupied by 7am on a Saturday with contractors, fishermen, retirees, and the occasional tourist who got the tip. Pancakes the size of a hubcap. If you can't find a seat, Local Catch in Blue Mountain does a great low-key breakfast and isn't on most guides.
Lunch that won't wreck your afternoon
Stinky's Fish Camp on Dune Allen is the move for a Gulf-side lunch that doesn't feel like a tourist trap, even though it's also a tourist destination — the locals are there too because the seafood is good and the bar makes a proper margarita. For a quick midday in-and-out, Amavida Coffee in Rosemary or the Bay does a clean grain bowl. Old Florida Fish House on Eastern Lake is underrated for lunch — better than dinner, in my opinion, because the patio at noon is hard to beat.
The dinner shortlist
Three spots I send people to if they're only here a few nights: Caliza Pool & Restaurant at Alys Beach (if they can get a reservation — book three weeks out), Bud & Alley's in Seaside (their rooftop bar at sunset is non-negotiable), and Grayton Seafood Co. for the genuinely local end of the spectrum. For sushi, FOOW at WaterColor — it's in a resort but the sushi chef knows what he's doing.
Where the agents and contractors eat
If you want to know which neighborhood you're in, look at who's at the bar. The Red Bar in Grayton (rebuilt after the 2019 fire, somehow even better) draws the artist-end crowd. La Crema Tapas in Rosemary is where you find people closing deals. AJ's in Watersound is the recent locals' clubhouse on a Tuesday night.
The off-season trick
Most of the best restaurants run reservations-only in summer but walk-in in February. The food's the same and you'll have the patio to yourself. If you're moving here and want to taste the full lineup, do it between Halloween and Valentine's Day. You'll meet half the staff on a first-name basis by March.
